Why this number: 200 g per US cup

We use the USDA measured weight, because for liquids, fats, syrups and free-flowing grains a measured weight is more reliable than a rounded ounce value. Where the two sources disagree, both figures are in the table above and in the calculator, so you can switch to the one your recipe was written with.

Granulated sugar is the best-behaved ingredient on this site. It flows, does not compact, and the two sources agree to within 1%: USDA 200 g, King Arthur 198 g (that is 7 oz rounded). We use USDA's 200 g.

Caster (superfine) sugar is not the same by volume: King Arthur lists 190 g per cup for superfine, because the smaller crystals nest together differently. Swapping caster for granulated by cup therefore changes the sugar weight by about 4%; swapping by gram does not.

A metric cup (250 ml) of granulated sugar is about 211 g. If an Australian recipe lists 1 cup sugar, it means this larger cup.

US cup, metric cup and spoons

One US cup of granulated sugar at our default weight is 200 g. A 250 ml metric cup, used in Australia, New Zealand, Canada and many metric recipes, holds the same volume plus 5.7%, which is 211 g. A US legal (nutrition label) cup of 240 ml is 203 g. These all assume the same packing as the US cup; read about it on US cup vs metric cup.
