1 cup all-purpose flour = 120 g · 1/2 cup = 60 g · 1/4 cup = 30 g

What the sources say about a cup of all-purpose flour

Spread across sources: 4% between USDA and King Arthur for the main entry. Ingredient weights vary by brand, packing and humidity; the table is a reference, not a guarantee.

Why this number: 120 g per US cup

We use King Arthur's published figure, which is a stated reference for home bakers and is the weight most gram-based recipes from that source use. Where the two sources disagree, both figures are in the table above and in the calculator, so you can switch to the one your recipe was written with.

For all-purpose flour the two sources are close but not identical: USDA lists 125 g for a cup of enriched unbleached flour and King Arthur lists 120 g. The gap of 4% is small next to what a heavy hand does. Flour packs when it is scooped straight out of a bag, so the same cup can weigh noticeably more than either figure. Neither source publishes a scooped weight, so we have not put a number on it here.

We default to 120 g per US cup because it is King Arthur's published figure, and a recipe written with gram weights from that source will usually match it. If your recipe came with its own gram weight, always use that and ignore this page.

In a metric (250 ml) cup the same flour is about 127 g, because the cup is 5.7% bigger. In UK and Australian recipes, plain flour is the nearest match to US all-purpose flour; self-raising flour is a different product (King Arthur's self-rising figure is in the table on the whole wheat flour page).

US cup, metric cup and spoons

One US cup of all-purpose flour at our default weight is 120 g. A 250 ml metric cup, used in Australia, New Zealand, Canada and many metric recipes, holds the same volume plus 5.7%, which is 127 g. A US legal (nutrition label) cup of 240 ml is 122 g. These all assume the same packing as the US cup; read about it on US cup vs metric cup.
