Why this number: 120 g per US cup

We use King Arthur's published figure, which is a stated reference for home bakers and is the weight most gram-based recipes from that source use. Where the two sources disagree, both figures are in the table above and in the calculator, so you can switch to the one your recipe was written with.

Bread flour shows the widest source gap of the common flours. King Arthur lists 120 g per cup, the same as its all-purpose flour, while USDA lists 137 g, a difference of 14%. Protein content changes how a flour behaves in dough but not how much a cup of it weighs, so the gap is almost certainly down to how the cup was filled rather than to the flour itself.

If a bread recipe is given in cups only, weigh the first cup you scoop and compare it with the table before you commit to a hydration. A dough made from 137 g cups is noticeably stiffer than one made from 120 g cups at the same water volume. For loaves, the water-to-flour ratio matters more than the cup.

The UK name is strong white flour. A metric cup (250 ml) holds about 127 g at our default weight.

US cup, metric cup and spoons

One US cup of bread flour at our default weight is 120 g. A 250 ml metric cup, used in Australia, New Zealand, Canada and many metric recipes, holds the same volume plus 5.7%, which is 127 g. A US legal (nutrition label) cup of 240 ml is 122 g. These all assume the same packing as the US cup; read about it on US cup vs metric cup.
