Why this number: 227 g per US cup

We use the USDA measured weight, because for liquids, fats, syrups and free-flowing grains a measured weight is more reliable than a rounded ounce value. Where the two sources disagree, both figures are in the table above and in the calculator, so you can switch to the one your recipe was written with.

Butter is easy: a cup is 2 US sticks, 16 tablespoons, and about 227 g. USDA measures 227 g for a cup and 14.2 g for a tablespoon; King Arthur's chart is 113 g for half a cup (8 tablespoons), which scales to 226 g a cup. The actual stick, printed with tablespoon marks on the wrapper, is 4 oz or 113.4 g.

The common trap is UK and metric butter, which is sold by weight rather than in sticks. A UK block is 250 g, which is a little more than 1 US cup (227 g) and almost exactly one metric cup of butter (about 240 g). A recipe that calls for "1 cup butter" and a 250 g block are close, but not the same, and for cakes the extra 23 g is enough to notice.

Soft, melted or whipped butter measures differently by volume, but weighs the same by gram, which is the main argument for weighing it.

US cup, metric cup and spoons

One US cup of butter at our default weight is 227 g. A 250 ml metric cup, used in Australia, New Zealand, Canada and many metric recipes, holds the same volume plus 5.7%, which is 240 g. A US legal (nutrition label) cup of 240 ml is 230 g. These all assume the same packing as the US cup; read about it on US cup vs metric cup.
