Cups of heavy cream to grams
1 US cup of heavy cream = 238 g (8.4 oz). A 250 ml metric cup = 251 g.
Type 1/2, 1 1/2 or 0.75. The cup size changes the volume; the weight scales by volume, so it assumes the same filling method in every cup.
What the sources say about a cup of heavy cream
Two published sources, side by side. Where a source lists several forms or ways of measuring, each is a row.
| Source | What was measured | Grams per US cup | Ounces |
|---|---|---|---|
| Our default | See “why this number” below | 238 g | 8.4 oz |
| USDA FoodData Central | Whipped, 1 cup | 120 g | 4.23 oz |
| USDA FoodData Central | Liquid, 1 cup | 238 g | 8.4 oz |
| King Arthur Baking | Cream (heavy cream, light cream, or half & half) | 227 g | 8.01 oz |
Spread across sources: 5% between USDA and King Arthur for the main entry. Ingredient weights vary by brand, packing and humidity; the table is a reference, not a guarantee.
Why this number: 238 g per US cup
We use the USDA measured weight, because for liquids, fats, syrups and free-flowing grains a measured weight is more reliable than a rounded ounce value. Where the two sources disagree, both figures are in the table above and in the calculator, so you can switch to the one your recipe was written with.
Liquid heavy cream weighs 238 g a cup by USDA (15 g per tablespoon); King Arthur rounds to 227 g (8 oz) for heavy cream, light cream and half-and-half alike. USDA also gives a second, very different cup: whipped cream at 120 g, because whipping roughly doubles the volume. A recipe that says "1 cup whipped cream" is asking for about half as much cream weight as "1 cup cream, whipped".
As a rough guide, 1 cup of liquid cream whips to about 2 cups (USDA states this yield), though it depends on the fat content and temperature.
UK double cream (about 48% fat) and US heavy cream (about 36 to 40%) are not identical; for conversion purposes their weights per cup are close.
